Full Stop Paragraph. Chef Rui Rebelo debuts in the wine world

Ponto Parágrafo is the debut of chef Rui Rebelo's signature in the wine world in the format of a Pét-Nat, short for Pétillant Naturel, a sparkling wine with fruity notes, light and young, with a characteristic gas.
Composed of the grape varieties Arinto, Avesso, Viosinho, Códega do Larinho and Rabigato, the grapes of Pet Nat Ponto Parágrafo come from Quinta da Castanheira, in Baião. The chef's touch is - in partnership with the oenologist Pedro Mota - in the low intervention profile of Pét-Nat: instead of being bottled in the steps of the ancestral method, its fermentation is done in an isobaric vat, which is equivalent to being in a 2500 liter bottle full of pressure, staying there to age.

The goal was to create a more refined Pét-Nat, with little suspended lees, which is refined in a vat, and the transfer to the bottle is done a few months later, so as not to lose pressure. The result is a refined Pét-Nat, more translucent, dry, without sugar, refined and stabilized to guarantee consistent quality for the next few years.

"I have a very close relationship with Quinta da Castanheira, let's call it a love story… Being born and raised in one of the most typical and bustling neighborhoods of Lisbon, and developing my whole life in the city, I return to the countryside and to Quinta, to zero out the noise, to blend in with the colors and flavors of nature, with the people, with the origin. The vineyard and the wine are the Quinta and are part of my DNA as a chef", says Rui Rebelo in a statement. "When we decided to launch the Terraço Editorial Restaurant, we gave it the concept of an enocultural library. From there to feeling the call to create our own wine, it was a natural step."

The chef adds: "Having Pét-Nat Ponto Parágrafo in my spaces is like bringing Quinta da Castanheira to the city, bringing together the best of my two worlds".
For now, it is only on sale at Terraço Editorial, in Lisbon. Each bottle costs 26 euros.
