If you usually eat carrots with the skin on, you can continue to do so. Apparently, you are not wrong. Besides avoiding waste, eating the skin of some vegetables can bring many benefits to your health.
Here are the vegetables that, according to the Alto Astral portal, you can eat without peeling. Enjoy!
1- White or sweet potatoes
The skin of this food is rich in essential fibers and minerals such as phosphorus, potassium and zinc.
2- Eggplant
It is rich in vitamins A and C, in addition to being made up of minerals such as calcium, potassium and zinc.

3- Carrot
It has beta-carotene, a precursor of vitamin A that acts directly on the production of melanin, responsible for the pigmentation of the skin and its protection against the sun's rays.

5- Onion
Stands out for its flavonoids, anti-inflammatory and antioxidant substances.
6- Cucumber
Has many fibers and minerals. For example, it is rich in magnesium.
