"I don't understand how torrefacto coffee isn't banned. It's not just because it has sugar, but because that sugar is burnt." This is according to Marisa Baqué, a Spanish coffee tasting and roasting expert, in an interview with ABC.

After natural roasting of the beans, sugars are added to this type of coffee. However,  sugar "doesn't add anything to the coffee". "Put a torrefacto coffee bean in cold water and see what happens. It only gives colour. The flavour is horrible. But the thing is that it has become a consumption habit", she also says.

The expert also explains that the sugar will have been initially added to improve the flavour. But some people believe that this happens because covering the bean with sugar helps to preserve it. "The reality is that the consumer believes that the quality is better and that's not true", she assures.
