Jarvis has been with easyJet since 2021 and will continue in the role of chief financial officer until a successor is found, the company said.
Lundgren is leaving after seven years in the role, during which time he has "done an excellent job", easyJet chairman Stephen Hester said.
"He has steered the company through the immense challenges of the Covid period and has set out a clear strategy and strong delivery plan for its ambition to 'become Europe's most loved airline, benefiting customers, shareholders and employees'," he said.
Hester said Lundgren will remain until the end of the financial year, which the company expects "to be another year of strong progress".
The promotion of Kenton Jarvis from chief financial officer to chief executive allows for "an orderly and smooth transition", he said, and was made "following a thorough process, with a strong field of internal and external candidates".
"We are focused on delivering the medium-term plan and associated financial targets set out earlier this year and believe Kenton is the ideal person to lead our executive team," he said.
